Tomato Potato Shreds (番茄土豆丝)

家庭快手版 · Home version: The restaurant version fries the shreds in more oil for a crisp-tender snap; the family version rinses off the surface starch and stir-fries in 2 tbsp oil, keeping the shreds distinct rather than clumped.

A Shandong home dish that costs almost nothing: two potatoes, two tomatoes, and the sour-sweet juice that makes plain rice disappear. It is the dish I cook when I have not been shopping in ten days.

Instructions

  1. 1Julienne the potatoes into matchsticks, then rinse in cold water 2-3 times until the water runs clear. Drain thoroughly.

🔍 Look for Low heat 5 分钟 · 5 minutes

Shreds look almost translucent and no longer cloud the water.

You know it's right when: 抓在手里不再黏团,摸起来发涩感。Shreds clump less in your hand and feel squeaky clean.

Rinsing off surface starch is the whole secret to non-clumpy stir-fried potato.

  2. 2Heat 2 tbsp oil over medium-high. Add the potato shreds and stir-fry 3 minutes, tossing constantly so they do not stick.

    🔍 Look for Medium-high 3 分钟 · 3 minutes

Shreds turn from opaque cream to slightly translucent with a few golden tips.

You know it's right when: 贴锅按压时能弯折而不断。They bend without snapping when pressed against the wok.

  3. 3Clear a space, add garlic and scallion, fry 15 seconds, then add the tomato and sugar.

    🔍 Look for Medium-high 约 1 分钟 · about 1 minute

Garlic turns pale gold and the tomato starts to release red juice.

You know it's right when: 番茄遇热油升起明显的酸甜香气。A sharp sweet-sour aroma rises as the tomato hits the hot oil.

  4. 4Cover and cook 3 minutes over medium-low so the potato finishes in the tomato steam.

    🔍 Look for Medium-low 3 分钟 · 3 minutes

Tomato collapses into sauce and steam beads on the lid.

You know it's right when: 土豆丝在锅边一压就碎。A shred mashes easily against the side of the wok.

  5. 5Uncover, add light soy sauce and Chinkiang vinegar, and toss 30 seconds over high heat. Serve immediately.

    🔍 Look for High heat 30 秒 · 30 seconds

Shreds are glossy and orange-tinted with no watery liquid in the pan.

You know it's right when: 醋香提亮但不刺鼻。The vinegar smell is bright but no longer sharp.

Tips

  • · Add the vinegar at the very end — earlier and it just evaporates.
  • · Use waxy potatoes if you can find them; they hold the shred shape better.
  • · Do not cover for too long or the shreds go soft and lose their snap.

Common questions

Is there a vegan substitute for oyster sauce?

Yes — 'mushroom oyster sauce' (often labeled vegetarian/vegan) is sold in most Asian grocers and increasingly in mainstream supermarkets. It behaves 1:1 and adds the same glossy umami. Watch labels if you're also gluten-free; most brands are GF, some aren't.

What's the difference between light and dark soy sauce?

Light soy (生抽) is the everyday salty seasoning — thin and salty, used in most recipes. Dark soy (老抽) is thicker, darker, slightly sweet, and used mostly for color (braises, fried rice). If you only buy one, get light soy. For dark soy's color: 1 tbsp light soy + a pinch of sugar + a few drops of molasses.

Why do you cook the aromatics (garlic/ginger) first on low heat?

Aromatics contain oils and sugars that turn bitter if scorched. Gentle heat (low-medium) lets garlic and ginger release their fragrance without browning too fast. If the pan is too hot, garlic goes bitter within seconds — that's why we always add aromatics first, before the main ingredients.
