Moo Shu Tofu (木须豆腐)
Moo shu literally means 'wood shavings' — a joke about how the shredded scrambled egg looks like curls of wood. In our house it was the dish that cleaned out the fridge: a handful of wood ear, whatever vegetable was wilting, and eggs to bind it all.

Instructions
1Press the tofu for 20 minutes, then crumble it by hand into rough 1 cm pieces — not a paste.
🔍 Look for Low heat Tofu pieces hold their shape, with dry-looking edges.
You know it's right when: 抓一把攥紧不再出水。A squeezed handful releases no water.
2Heat 1 tbsp oil over medium-high and fry the crumbled tofu 4-5 minutes without stirring much, until edges turn golden.
Patches of deep golden crust form on the tofu faces.
You know it's right when: 锅内滋滋声变小,说明表面水分已收干。The pan sizzles more quietly as surface moisture cooks off.
3Push tofu aside, pour in the beaten eggs, and scramble until just set, breaking them into small curds.
Egg is opaque and separated into fluffy curds, no liquid shine.
You know it's right when: 蛋块表面发哑光而不是亮晶晶。Curd surfaces look dry and matte rather than glossy.
4Add wood ear and carrot, stir-fry 2 minutes until the carrot softens slightly but still has bite.
Carrot turns a brighter orange and bends without snapping.
You know it's right when: 木耳受热发出轻微的噼啪声。Wood ear pieces make a faint crackle as they release steam.
5Season with light soy sauce and white pepper, toss 30 seconds, finish with sesame oil and scallion off the heat.
🔍 Look for High heat Every piece is evenly tinted light brown; scallion stays bright green.
You know it's right when: 生抽遇热锅一秒内散出焦香味。Soy sauce hits the hot pan and smells toasty within one second.
Tips
- · Do not skip pressing the tofu — wet tofu steams instead of browning.
- · Wood ear adds the classic crunch; sliced shiitake is an acceptable substitute.
- · Serve with steamed rice or rolled in a warm flour tortilla as a moo shu wrap.

Common questions
What type of tofu should I use?
Silken/soft tofu (嫩豆腐) for mapo tofu and soups — silky, falls apart gently. Firm/extra-firm (老豆腐) for stir-fries, braises, and anything you want to keep its shape. If the recipe doesn't say, firm is the safe default for stir-fries.

Is there a vegan substitute for oyster sauce?
Yes — 'mushroom oyster sauce' (often labeled vegetarian/vegan) is sold in most Asian grocers and increasingly in mainstream supermarkets. It behaves 1:1 and adds the same glossy umami. Watch labels if you're also gluten-free; most brands are GF, some aren't.

What's the difference between light and dark soy sauce?
Light soy (生抽) is the everyday salty seasoning — thin and salty, used in most recipes. Dark soy (老抽) is thicker, darker, slightly sweet, and used mostly for color (braises, fried rice). If you only buy one, get light soy. For dark soy's color: 1 tbsp light soy + a pinch of sugar + a few drops of molasses.
