Eggplant Stir-Fried in Sweet Bean Paste (酱爆茄子)

酱 (jiang) is the northern Chinese word for the thick fermented pastes that anchor Beijing cooking — sweet wheat paste, soybean paste, and the darker ones aged in earthen jars. 酱爆 means "blasted paste": the sauce is fried alone in hot oil until it smells caramel-sweet and smoky, then the vegetable is tossed through it so every surface gets coated. It is the cheapest way to make eggplant taste like a restaurant dish.

  1. 1Roll-cut the eggplant: rotate a quarter turn between each diagonal slice so you get wedge-shaped pieces with plenty of cut surface. Pat dry.

  2. 2Heat 2 tbsp oil over medium-high. Add eggplant in one layer and fry 4 minutes, stirring only twice, until golden in patches. Remove to a plate.

  3. 3Lower heat to medium. Add the last 1/2 tbsp oil, garlic, ginger and scallion whites. Stir 20 seconds until fragrant but not browned.

  4. 4Add the sweet bean paste. Fry it in the oil for 45 seconds, pressing and stirring constantly, until it darkens slightly and smells caramel-sweet. This step is the whole dish.

  5. 5Splash in the Shaoxing wine along the pan edge, then add soy sauce, sugar and 60 ml water. Stir to a loose sauce and bring it to a simmer.

  6. 6Return the eggplant. Toss over medium-high for 1–2 minutes until every piece is coated and glossy. Off the heat, stir in sesame oil and serve.

Common questions

How do I keep eggplant from soaking up all the oil?

Two tricks: salt the cut eggplant and let it sit 10–15 minutes, then squeeze out the water — this collapses the spongy structure that drinks oil. Or microwave or steam it briefly first so it's half-cooked before it hits the pan. Either way it stays creamy inside with far less grease.

Can I skip Shaoxing wine? What's the substitute?

Dry sherry is the closest 1:1 swap (fidelity ~80%). No sherry? Use a splash of white wine plus a little water, or just skip it and add a tiny extra pinch of sugar — the wine's job is depth and removing meat's gamey notes, and a good marinade covers most of it.

Is there a vegan substitute for oyster sauce?
