Vegetable Geda Tang (Clear, Light & Wholesome Dumpling Soup)

Home version: Family version skips meat entirely — relies on shredded carrots, spinach, and dried shiitake soaking liquid for savory depth and natural sweetness.

My mother in Beijing made this every winter morning when I had a sore throat — she’d rehydrate dried shiitakes overnight, shred carrots paper-thin with a knife (never a grater!), and stir the geda in so gently that each one stayed light as cloud puffs.

dried shiitake mushrooms: Soak in 250 ml warm water for 20 min; reserve liquid and slice caps thinly.

carrots: Shred by hand using a sharp knife for finer, more tender strands.

baby spinach: Stems removed; leaves washed thoroughly — grit ruins texture.

Instructions

  1. 1Soak dried shiitakes in warm water 20 min. Strain soaking liquid through coffee filter or fine mesh; reserve liquid and thinly slice mushrooms.

    🔍 Look for 20 分钟 · 20 minutes

Liquid is amber-gold, clear, and intensely fragrant; mushrooms plump and supple.

You know it's right when: 轻按香菇柔软有弹性——无硬芯。Mushrooms feel soft and elastic when pressed — no hard core remains.

  2. 2Heat oil in pot over medium heat. Sauté shiitake slices and carrot shreds until carrots soften slightly and release sweetness (3–4 min). Do not brown.

🔍 Look for Medium heat 3–4 分钟 · 3–4 minutes

Carrot shreds turn translucent at edges; oil glistens with golden hue.

You know it's right when: 香气由土腥转为焦糖甜香——无苦味。Fragrance shifts from earthy to sweet-caramel — no bitter notes.

  3. 3Add reserved mushroom liquid and 500 ml water. Bring to gentle simmer. Stir in salt and white pepper. Simmer uncovered 5 minutes to meld flavors.

    🔍 Look for Medium-low 5 分钟 · 5 minutes

Surface shimmers with slow, even bubbles; broth deepens to pale amber.

You know it's right when: 蒸汽匀速上升,汤量减少约十分之一。Steam rises steadily — broth volume reduces ~10%.

  4. 4Whisk flour with 90 ml cold water until smooth. Rest 2 min. Use chopsticks to flick batter into simmering broth — aim for tiny, rice-grain geda.

    🔍 Look for Medium-low 45 秒 · 45 seconds

Geda form instantly as distinct specks — no strings or trails in broth.

You know it's right when: 每次拨入有轻微‘噗’声——汤温正合适。Each flick produces a ‘pop’ sound — indicates proper broth temperature.

  5. 5Simmer 3 minutes until geda float and swell. Stir in spinach leaves and cook just until wilted (30 sec). Turn off heat. Serve immediately.

    🔍 Look for Low heat 30 秒 · 30 seconds

Spinach turns vibrant dark green; geda are plump, white, and suspended evenly.

You know it's right when: 叶片完全塌软但泛油光——无暗橄榄色。Leaves collapse fully but retain sheen — no dull olive color.

Tips

  • · Hand-cut carrot shreds absorb broth better than grated ones.
  • · Add spinach last — overcooking makes it slimy and dulls color.
  • · For extra umami, add 1 tsp light soy sauce — optional but common in Beijing homes.

Common questions

Is there a vegan substitute for oyster sauce?

Yes — 'mushroom oyster sauce' (often labeled vegetarian/vegan) is sold in most Asian grocers and increasingly in mainstream supermarkets. It behaves 1:1 and adds the same glossy umami. Watch labels if you're also gluten-free; most brands are GF, some aren't.

What's the difference between light and dark soy sauce?

Light soy (生抽) is the everyday salty seasoning — thin and salty, used in most recipes. Dark soy (老抽) is thicker, darker, slightly sweet, and used mostly for color (braises, fried rice). If you only buy one, get light soy. For dark soy's color: 1 tbsp light soy + a pinch of sugar + a few drops of molasses.

How do I make this vegetarian/vegan?

Swap meat for tofu, mushrooms (dried shiitake for umami), or seitan. Replace oyster sauce with mushroom sauce, chicken stock with veg stock, and watch for fish sauce and shrimp in sauces. Doubanjiang is vegetarian but check brands. Most of our recipes include a 'make it veg' note in the tips.
