Shrimp with Silky Eggs (滑蛋虾仁)

滑蛋虾仁 · huá dàn xiā rén

家庭快手版 · Home version: Family version cooks the eggs low and slow in one pan so they set into soft curds; restaurant version uses a screaming-hot wok and a ladle of hot oil for a puffier, glossier finish.

The Cantonese test of a home cook: eggs that stay soft and just-set, never dry. Shrimp go in first so their sweet liquor seasons the custard.

    🔍 Look for Low heat 60 秒 · 60 seconds

Visual: 形成软絮,表面仍湿润发亮。Soft folds form; the surface still looks wet and glossy.

  6. 6Turn off the heat, scatter scallion and serve immediately.

    出锅

    🔍 Look for 10 秒 · 10 seconds

Visual: 奶白蛋絮中透出粉虾。Creamy curds with pink shrimp peeking through.

You know it's right when: 无焦斑、不澥水。No browned spots, no liquid runoff.

Tips

  • · Low heat is the whole trick — a hot pan scrambles the eggs.
  • · Cornstarch in the egg keeps the curds from weeping.
  • · Pull the pan a beat before it looks done; carryover heat finishes it.

Quantities, technique notes, and substitution ratios are cross-checked against established Chinese cookery references and standard food-science sources.

Common questions

Can I skip Shaoxing wine? What's the substitute?

Dry sherry is the closest 1:1 swap (fidelity ~80%). No sherry? Use a splash of white wine plus a little water, or just skip it and add a tiny extra pinch of sugar — the wine's job is depth and removing meat's gamey notes, and a good marinade covers most of it.

Can I reduce the salt/soy in this recipe?

Yes — soy sauce is the main sodium source. Use light soy at 2/3 amount and finish with salt only to taste. Rinse canned/doubanjiang components if possible. Note: reducing soy also reduces color; a drop of dark soy or a pinch of sugar can restore depth without salt.

What is velveting and why do it?

Velveting = coating meat in cornstarch (sometimes egg white + a splash of wine/soy) before cooking. The starch forms a protective layer that seals in juices and prevents the meat from drying out at high heat. This is the secret to restaurant-smooth beef in dishes like beef & broccoli. At home: 1 tbsp cornstarch + 1 tbsp water (or soy/wine) per 250 g meat, rest 10 min, then stir-fry.
