Sesame Paste Flower Rolls (Ma Jiang Hua Juan)
麻酱花卷 · má jiàng huā juǎn
Sesame paste flower rolls are what northern grandmothers made when there was no filling in the house but plenty of ambition. The trick everyone learns the hard way is that sesame paste straight from the jar is far too stiff to spread — it tears the dough. You loosen it with sesame oil first, and the roll goes from a smeared mess to a clean spiral.

all-purpose flour: Spoon and level rather than scooping
warm water (35°C): Body temperature — hotter kills the yeast
Chinese sesame paste: Stone-ground Chinese sesame paste, not tahini — the roast is deeper
light soy sauce: Just enough to salt the paste without darkening it

Instructions
1Stir the yeast and half the sugar into the warm water. Leave 8 minutes.
活化酵母

You know it's right when: 泡沫带淡淡酒酿味,轻敲不塌陷Foam smells faintly of beer and does not collapse when tapped
No foam means dead yeast — start over with a fresh packet.
2Mix flour, remaining sugar and salt. Add the yeast water and oil, bring to a shaggy mass, then knead 12 minutes.

Add the oil slowly. Dump it all at once and the paste goes slack and runs straight out of the roll.
5Roll the dough to a 40×30 cm rectangle. Spread the paste to within 1 cm of the edge, roll up tightly from the long side, trim and cut into 8. Press each piece lengthwise with a chopstick, then twist and pinch the ends underneath.

Tips
- · Loosen the sesame paste with oil, never with water — water makes it grainy and it will not spread.
- · Leave a 1 cm border when spreading, or the paste squeezes out and the spiral smears.
- · Freeze cooled rolls up to 3 months and re-steam 8 minutes straight from frozen.

Common questions
Is there a vegan substitute for oyster sauce?
Yes — 'mushroom oyster sauce' (often labeled vegetarian/vegan) is sold in most Asian grocers and increasingly in mainstream supermarkets. It behaves 1:1 and adds the same glossy umami. Watch labels if you're also gluten-free; most brands are GF, some aren't.

Can I reduce the salt/soy in this recipe?
Yes — soy sauce is the main sodium source. Use light soy at 2/3 amount and finish with salt only to taste. Rinse canned/doubanjiang components if possible. Note: reducing soy also reduces color; a drop of dark soy or a pinch of sugar can restore depth without salt.

What's the difference between light and dark soy sauce?
Light soy (生抽) is the everyday salty seasoning — thin and salty, used in most recipes. Dark soy (老抽) is thicker, darker, slightly sweet, and used mostly for color (braises, fried rice). If you only buy one, get light soy. For dark soy's color: 1 tbsp light soy + a pinch of sugar + a few drops of molasses.
