Pork and Cabbage Dumplings
Making pork and cabbage dumplings together is a Chinese family ritual — on New Year's Eve, three generations gather around a flour-dusted table, rolling wrappers and pinching pleats while the pot boils. The cabbage is salted and squeezed so the filling stays juicy but never soggy. Some families hide a coin in one dumpling for luck; whoever finds it has a lucky year.

ground pork (20-30% fat): Some fat is essential for a juicy filling. Lean-only turns dry.
napa cabbage: Salt, squeeze dry, and chop fine. The squeeze step is the whole trick.

Instructions
1Make the dough: mix flour with about 200 ml cold water, knead 5 minutes into a smooth ball, cover and rest 30 minutes.
Dough is smooth and elastic; it springs back when pressed
You know it's right when: 表面光滑无裂纹Surface is smooth, no cracks
2Salt the cabbage: chop fine, toss with 1 tsp salt, rest 15 minutes. Then squeeze firmly in handfuls until nearly dry.
A pool of pale green water collects; cabbage reduces in volume
You know it's right when: 用力挤一把,几乎不出水Squeezed handfuls release almost no liquid
3Make the filling: combine pork, cabbage, ginger, scallions, soy, Shaoxing, white pepper, and sesame oil. Stir in one direction until the filling feels tacky and holds together — about 2 minutes.
Filling is uniform and slightly sticky; no separated liquid
You know it's right when: 舀一勺能保持形状不散A spoonful holds its shape when scooped
4Roll the dough into a log, cut into 12 g pieces, flatten, and roll into thin round wrappers (about 8 cm).
Wrappers are even, edges thinner than the center
You know it's right when: 透过边缘能隐约看到手You can see your hand faintly through the edge
5Fill and pleat: place a heaping teaspoon of filling in the center, fold into a half-moon, and pleat the edge closed. Press out air pockets.
Dumplings are plump, tightly sealed, standing upright
You know it's right when: 轻捏封口不松开Seam holds firm when squeezed
6Boil: bring a large pot of water to a rolling boil. Add dumplings in batches, stir gently once. When they float, add 1/2 cup cold water; boil again; repeat once more. Drain.
🔍 Look for High heat Dumplings float and look slightly translucent, skin puffed
You know it's right when: 按压一个——完全回弹Press one — it springs back fully
7Serve immediately with black vinegar (and chili oil, if you like). The filling should be juicy — 'soup' inside is the sign of a good dumpling.
Bitten dumpling releases a small burst of juice
You know it's right when: 汤汁滚烫咸鲜,不油腻Juice is hot and savory, not greasy
Tips
- · The cabbage squeeze determines everything — too wet, and the dumplings burst; too dry, and they're tough.
- · Stir the filling in ONE direction. It makes the texture bouncier ('q' in Chinese).
- · Freeze uncooked dumplings on a floured tray; boil straight from frozen (+2 minutes).
- · The classic dip: black vinegar + a drop of sesame oil, or chili oil for heat.

Common questions
Can I skip Shaoxing wine? What's the substitute?
Dry sherry is the closest 1:1 swap (fidelity ~80%). No sherry? Use a splash of white wine plus a little water, or just skip it and add a tiny extra pinch of sugar — the wine's job is depth and removing meat's gamey notes, and a good marinade covers most of it.

Is there a vegan substitute for oyster sauce?
Yes — 'mushroom oyster sauce' (often labeled vegetarian/vegan) is sold in most Asian grocers and increasingly in mainstream supermarkets. It behaves 1:1 and adds the same glossy umami. Watch labels if you're also gluten-free; most brands are GF, some aren't.

What's the difference between light and dark soy sauce?
Light soy (生抽) is the everyday salty seasoning — thin and salty, used in most recipes. Dark soy (老抽) is thicker, darker, slightly sweet, and used mostly for color (braises, fried rice). If you only buy one, get light soy. For dark soy's color: 1 tbsp light soy + a pinch of sugar + a few drops of molasses.

Ingredient swaps
Can't find an Asian-market staple? Use these.
Swap: light soy sauce
→ regular soy sauce
Ratio: 1:1 · Slightly saltier — dial salt back by a pinch.
Swap: sesame oil
→ toasted sesame oil (same thing!)
Ratio: 1:1 · Check the label: use toasted (dark), not raw.
Swap: Shaoxing wine
→ dry sherry or mirin (less sweet)
Ratio: 1:1 · Both add the same warm fermented depth.
Don't make these mistakes
The traps every home cook hits — and how to avoid them.
✗ Filling too wet — wrappers tear while pleating.
✓ Fix: Squeeze out moisture; chill filling 15 min before wrapping.
✗ Not sealing edges — dumplings open in the pot.
✓ Fix: Dab water on the edge and pinch firmly; crimp twice.
Ways to change it up
One dish, three moods.
- Use ground pork for a quicker, softer texture
- Add a handful of cabbage for bulk and sweetness
- Skip the meat for a vegetarian version with extra tofu
