Every Hunan kitchen keeps a jar of 酱辣椒 — whole green or red chilies cured in soy sauce and salt until they turn olive-dark and taste salty, sour and sharp all at once. Chop a spoonful into beating eggs and you get the province's fastest rice-killer: eggs that are fluffy, chili-flecked and loudly savoury. It is the dish Hunan students cook in a dorm hotplate and the dish grandmothers put out when there is nothing else in the fridge.

1Crack the eggs into a bowl, add the Shaoxing wine, white pepper and light soy sauce, then beat hard for a full 30 seconds until completely uniform and a layer of fine foam floats on top.

- · Drain the pickled chilies but save a teaspoon of the brine — stirring it into the eggs adds the sour back without extra salt.
- · Use more oil than feels right. Egg absorbs oil fast; a thin pan gives you dry, rubbery curds.
- · No pickled chilies? Blend 2 fresh jalapenos with 1 tsp soy sauce and 1 tsp rice vinegar, rest 15 minutes, then use.

Common questions
Can I skip Shaoxing wine? What's the substitute?
Dry sherry is the closest 1:1 swap (fidelity ~80%). No sherry? Use a splash of white wine plus a little water, or just skip it and add a tiny extra pinch of sugar — the wine's job is depth and removing meat's gamey notes, and a good marinade covers most of it.

Is there a vegan substitute for oyster sauce?
Yes — 'mushroom oyster sauce' (often labeled vegetarian/vegan) is sold in most Asian grocers and increasingly in mainstream supermarkets. It behaves 1:1 and adds the same glossy umami. Watch labels if you're also gluten-free; most brands are GF, some aren't.

What's the difference between light and dark soy sauce?
Light soy (生抽) is the everyday salty seasoning — thin and salty, used in most recipes. Dark soy (老抽) is thicker, darker, slightly sweet, and used mostly for color (braises, fried rice). If you only buy one, get light soy. For dark soy's color: 1 tbsp light soy + a pinch of sugar + a few drops of molasses.
