Garlic Vermicelli Steamed Oysters

Home version: Oysters shrink when steamed — don't overcook or they become rubbery.

Guangdong's oyster omelette gets all the fame, but steamed oysters with garlic are the quiet champion. The key is speed — 3 minutes is all they need. Any longer and you've lost the ocean's sweetness.

Instructions

  1. 1Soak vermicelli in warm water 10 minutes. Drain, cut into short pieces. Arrange on each oyster half.

  2. 2Tap each oyster shell gently — if it stays open and does not close, discard it. Live oysters close when tapped.

  3. 3Make garlic sauce: mix minced garlic with soy sauce and 1 tbsp oil. Spoon generously over each oyster.

  4. 4Soak vermicelli in warm water 10 minutes. Drain, cut into short pieces. Arrange on each oyster half.

  5. 5Steam over high heat for exactly 3 minutes. The oyster should still jiggle when removed.

🔍 Look for High heat 3 分钟 · 3 minutes

Oyster edges curl slightly and turn opaque

You know it's right when: 蚝肉微鼓起但仍颤动Oyster flesh puffs up slightly but still jiggles

  6. 6Remove from steamer immediately. Sprinkle with chopped scallion if desired. Serve on a platter with lemon wedges.

Tips

  • · Freshness is non-negotiable — if it smells fishy before cooking, don't cook it.
  • · 3 minutes is the golden rule. Set a timer.
  • · Lemon wedge on the side cuts the richness perfectly.

Common questions

Is there a vegan substitute for oyster sauce?

Yes — 'mushroom oyster sauce' (often labeled vegetarian/vegan) is sold in most Asian grocers and increasingly in mainstream supermarkets. It behaves 1:1 and adds the same glossy umami. Watch labels if you're also gluten-free; most brands are GF, some aren't.

What's the difference between light and dark soy sauce?

Light soy (生抽) is the everyday salty seasoning — thin and salty, used in most recipes. Dark soy (老抽) is thicker, darker, slightly sweet, and used mostly for color (braises, fried rice). If you only buy one, get light soy. For dark soy's color: 1 tbsp light soy + a pinch of sugar + a few drops of molasses.

Why do you cook the aromatics (garlic/ginger) first on low heat?

Aromatics contain oils and sugars that turn bitter if scorched. Gentle heat (low-medium) lets garlic and ginger release their fragrance without browning too fast. If the pan is too hot, garlic goes bitter within seconds — that's why we always add aromatics first, before the main ingredients.
