  1. 1Cover the dried shiitake with 500 ml warm water and soak for 30 minutes until the caps are fully soft. Lift the mushrooms out, squeeze them gently, and strain the soaking liquid through a fine sieve, leaving the last gritty tablespoon behind.

  2. 2Put the chicken in a pot, cover with cold water, and bring to a boil. Boil for 3 minutes, then pour everything out and rinse the chicken under cold water. Wash the pot too. This removes the scum that would otherwise cloud the soup permanently.

  3. 3Return the clean chicken to the clean pot with 2.5 L cold water, the ginger, scallion knot, Shaoxing wine, soaked shiitake, and the strained soaking liquid. Bring to a boil, then immediately drop to the lowest simmer.

Can I skip Shaoxing wine? What's the substitute?

Dry sherry is the closest 1:1 swap (fidelity ~80%). No sherry? Use a splash of white wine plus a little water, or just skip it and add a tiny extra pinch of sugar — the wine's job is depth and removing meat's gamey notes, and a good marinade covers most of it.

Is there a vegan substitute for oyster sauce?

Yes — 'mushroom oyster sauce' (often labeled vegetarian/vegan) is sold in most Asian grocers and increasingly in mainstream supermarkets. It behaves 1:1 and adds the same glossy umami. Watch labels if you're also gluten-free; most brands are GF, some aren't.

Can I reduce the salt/soy in this recipe?
