Pop-open Cruller (开口笑)
开口笑 · kāi kǒu xiào
These golden balls crack open when bitten, revealing a hollow center — hence the name 'laughing opening.' A Sichuan festival treat, crispy outside, chewy inside, rolled in sugar.

Tips
- · Oil temperature is critical — too hot outside burns before inside cooks
- · The cracks forming are the signature — don't try to prevent them
- · Fry in batches — overcrowding drops oil temp
- · Best eaten same day — they lose crispiness overnight

Common questions
I can't find Sichuan peppercorns. What do I use?
Honestly, there is no true substitute — the numbing (má) sensation is unique. Best local approximation: 1/2 tsp black pepper + a little citrus zest for warmth and brightness. If you cook Sichuan food regularly, buy them online; they keep for months in an airtight jar.
