
Stir-Fried Potato Shreds with Green Pepper (青椒土豆丝)
青椒土豆丝 · qīng jiāo tǔ dòu sī
If you learn one stir-fry in China it is probably this one. It costs almost nothing, uses a vegetable every household keeps on hand, and it is a small test of knife work — even threads, or it cooks unevenly. The green pepper is not decoration: it is cut to the same size as the potato and goes in late, so it stays crunchy and tastes green against the mild sweetness of the potato.

1Cut the potatoes into matchsticks about 3 mm thick. If you can't do it by hand, use the coarse shredding blade of a box grater or a mandoline.

2Rinse the shreds under cold water 3 times, then soak in fresh cold water 5 minutes. Drain well and pat dry.

7Add salt, the remaining vinegar down the side of the wok, and scallion greens. Toss once more and serve immediately.

The second splash of vinegar goes down the hot pan wall so it vaporizes into aroma, not into the food.
Tips
- · Rinse until the water runs clear. Starch is exactly what makes potatoes gluey.
- · Dry the shreds before they hit the oil — water drops the pan temperature and you steam instead of fry.
- · Add vinegar twice: early for crunch, late for aroma.
- · Salt last. Salting early draws water out and the shreds go limp.

Common questions
Can I reduce the salt/soy in this recipe?
Yes — soy sauce is the main sodium source. Use light soy at 2/3 amount and finish with salt only to taste. Rinse canned/doubanjiang components if possible. Note: reducing soy also reduces color; a drop of dark soy or a pinch of sugar can restore depth without salt.

How do I keep eggplant from soaking up all the oil?
Two tricks: salt the cut eggplant and let it sit 10–15 minutes, then squeeze out the water — this collapses the spongy structure that drinks oil. Or microwave or steam it briefly first so it's half-cooked before it hits the pan. Either way it stays creamy inside with far less grease.

Why do you cook the aromatics (garlic/ginger) first on low heat?
Aromatics contain oils and sugars that turn bitter if scorched. Gentle heat (low-medium) lets garlic and ginger release their fragrance without browning too fast. If the pan is too hot, garlic goes bitter within seconds — that's why we always add aromatics first, before the main ingredients.
