This is the technique that impressed my mother-in-law — a pastry so flaky it crumbles into golden shards. The multiple-fold method comes from French puff pastry but uses Chinese lard and technique. Each bite releases a cloud of layers.

Instructions

  1. 1Make dough: combine flour, salt, 30g lard and warm water. Knead 10 minutes until very smooth. Rest covered 30 minutes.

  2. 2Make oil paste: mix 150g softened lard with 150g flour until smooth. Should be plasticine-like.

  3. 3Roll dough into large rectangle (30x20cm). Spread oil paste evenly, leaving 1cm border.

  4. 4Fold like letter: left third over center, right third over. Roll again, fold again. Repeat 3 times total.

  5. 5Final roll into 30x20cm rectangle. Cut into 6 squares. Brush with water, press sesame on top.

  6. 6Bake at 190°C (375°F) for 22-25 minutes. Rotate halfway. Cool on rack 5 minutes.

Common questions

Can I reduce the salt/soy in this recipe?

Yes — soy sauce is the main sodium source. Use light soy at 2/3 amount and finish with salt only to taste. Rinse canned/doubanjiang components if possible. Note: reducing soy also reduces color; a drop of dark soy or a pinch of sugar can restore depth without salt.

Can I skip Shaoxing wine? What's the substitute?

Dry sherry is the closest 1:1 swap (fidelity ~80%). No sherry? Use a splash of white wine plus a little water, or just skip it and add a tiny extra pinch of sugar — the wine's job is depth and removing meat's gamey notes, and a good marinade covers most of it.

My dish came out too salty. Can I fix it?

Quick fixes: add a squeeze of lemon/vinegar (acidity masks salt), stir in a few potato chunks or rice (they absorb salt — remove before serving), or bulk it out with more rice/vegetables. Next time: add soy sauce in two stages, taste in the middle, and remember light soy + a pinch of salt is often enough.
