  1. 1Peel the potatoes and cut them into the thinnest matchsticks you can manage, about 2 mm thick. Soak the shreds in a bowl of cold water for 5 minutes, then change the water once. The water will look cloudy — that is the surface starch you are removing.

  3. 3Drain instantly and dump the shreds into a bowl of ice water. Leave them for 2 minutes, until completely cold. This is the step that sets the crunch — the starch retrogrades and the strands firm up noticeably.

Common questions

I can't find Sichuan peppercorns. What do I use?

Honestly, there is no true substitute — the numbing (má) sensation is unique. Best local approximation: 1/2 tsp black pepper + a little citrus zest for warmth and brightness. If you cook Sichuan food regularly, buy them online; they keep for months in an airtight jar.

It's too spicy. How do I tone it down?

Add a dairy element (a swirl of yogurt, milk, or a spoon of peanut butter) — dairy fat binds the capsaicin. Sugar or honey also helps balance heat. For next time: remove chili seeds (they hold most heat) or halve the dried chilies and add chili oil at the table instead.

Can I reduce the salt/soy in this recipe?
