
Cold-Dressed Steamed Eggplant (凉拌茄子)
凉拌茄子 · liáng bàn qié zi
In Sichuan, this is what lands on the table first on a hot evening — the one cold dish that requires no skill and yet is easy to get wrong. The trick is restraint: steam the eggplant whole so it never touches water, tear rather than cut it so the sauce has somewhere to hide, and pour a sauce raw garlic has already been sitting in. Five minutes of work, and the plate is always the first emptied.

Instructions
1While the water heats, mince the garlic and combine it with soy sauce, vinegar, sugar and sesame oil in a small bowl. Let it sit while the eggplant cooks — raw garlic mellows in acid.

2Steam the whole eggplants, unpeeled, over high heat for 10–12 minutes. Do not cut them open first — waterlogging is what makes this dish bland.

4Tear the eggplant lengthwise into thick strips with your fingers or chopsticks — roughly 1.5 cm wide. Arrange them loosely on a shallow plate.

How do I keep eggplant from soaking up all the oil?
Two tricks: salt the cut eggplant and let it sit 10–15 minutes, then squeeze out the water — this collapses the spongy structure that drinks oil. Or microwave or steam it briefly first so it's half-cooked before it hits the pan. Either way it stays creamy inside with far less grease.

Is there a vegan substitute for oyster sauce?
Yes — 'mushroom oyster sauce' (often labeled vegetarian/vegan) is sold in most Asian grocers and increasingly in mainstream supermarkets. It behaves 1:1 and adds the same glossy umami. Watch labels if you're also gluten-free; most brands are GF, some aren't.

I can't find Sichuan peppercorns. What do I use?
Honestly, there is no true substitute — the numbing (má) sensation is unique. Best local approximation: 1/2 tsp black pepper + a little citrus zest for warmth and brightness. If you cook Sichuan food regularly, buy them online; they keep for months in an airtight jar.
