Every summer in Xi’an’s Beilin District, my grandmother grilled long purple eggplants over charcoal briquettes in her courtyard. She’d mash them with crushed garlic and black vinegar while still steaming, saying, 'The heat wakes up the garlic’s soul.' We ate it with millet porridge and pickled radish.

Instructions
1Prick eggplants all over with a fork. Place directly on oven rack or grill grate over medium coals. Roast 25–30 minutes, turning every 8 minutes, until completely collapsed, charred in spots, and yielding to gentle squeeze.

What's the difference between light and dark soy sauce?
Light soy (生抽) is the everyday salty seasoning — thin and salty, used in most recipes. Dark soy (老抽) is thicker, darker, slightly sweet, and used mostly for color (braises, fried rice). If you only buy one, get light soy. For dark soy's color: 1 tbsp light soy + a pinch of sugar + a few drops of molasses.
