Coke Chicken Wings (可乐鸡翅)

可乐鸡翅 · kě lè jī chì

家庭快手版 · Home version: The family version is a one-pan braise: wings caramelized, then simmered in cola until the sauce turns into a glossy glaze. Restaurant versions add star anise and a splash of Shaoxing for depth.

Coke chicken wings is the dish that 90s Chinese kids begged their parents to make — because cola was a treat, and putting it in dinner felt like magic. The caramel from the coke glazes the wings a deep amber, sweet-salty, sticky and glossy. It's still the gateway dish for teaching teenagers to cook: hard to mess up, impossible to forget.

Tips

  • · Dry wings are the secret — wet wings steam instead of sear.
  • · Don't use diet coke. The sugar is the entire sauce.
  • · If the sauce gets too thick before the wings are tender, add 2 tbsp hot water and keep simmering.
  • · This glaze also works beautifully on pork ribs or tofu puffs.

Common questions

Is there a vegan substitute for oyster sauce?

Yes — 'mushroom oyster sauce' (often labeled vegetarian/vegan) is sold in most Asian grocers and increasingly in mainstream supermarkets. It behaves 1:1 and adds the same glossy umami. Watch labels if you're also gluten-free; most brands are GF, some aren't.

Can I skip Shaoxing wine? What's the substitute?

Dry sherry is the closest 1:1 swap (fidelity ~80%). No sherry? Use a splash of white wine plus a little water, or just skip it and add a tiny extra pinch of sugar — the wine's job is depth and removing meat's gamey notes, and a good marinade covers most of it.

What's the difference between light and dark soy sauce?

Light soy (生抽) is the everyday salty seasoning — thin and salty, used in most recipes. Dark soy (老抽) is thicker, darker, slightly sweet, and used mostly for color (braises, fried rice). If you only buy one, get light soy. For dark soy's color: 1 tbsp light soy + a pinch of sugar + a few drops of molasses.

Ingredient swaps

Can't find an Asian-market staple? Use these.

  • Swap: light soy sauce

    regular soy sauce

Ratio: 1:1 · Slightly saltier — dial salt back by a pinch.

  • Swap: oyster sauce (optional)

hoisin + ½ tsp fish sauce (or soy)

Ratio: 1:1 · Sweeter and thicker; thin with a little water.

  • Swap: Shaoxing wine

dry sherry or mirin (less sweet)

Ratio: 1:1 · Both add the same warm fermented depth.

Don't make these mistakes

The traps every home cook hits — and how to avoid them.

  • Crowding the pan — ingredients steam instead of sear.

Fix: Cook in batches; give each piece room to brown.

  • Adding sauce too early — the wok cools and flavors dull.

Fix: Push food up the wok wall, add sauce to the hot center, toss fast.

Ways to change it up

One dish, three moods.

  • Use chicken thighs instead of breast — juicier, more forgiving
  • Double the sauce for a rice-bowl version
  • Add cashews or peanuts for crunch at the end
