Tomato Beef Roll Pot (番茄肥牛锅)
The weeknight version of hot pot: one burner, one pot, and the beef cooked at the table in the last two minutes. It became our Friday ritual because it feels like an event but dirties only one pan.

Instructions
1Heat 1 tbsp oil over medium-high. Add tomato wedges and garlic; stir-fry 5 minutes until the tomatoes collapse into a thick sauce.
Sauce turns deep red and separates slightly from the oil.
You know it's right when: 勺子划出的沟能保持一秒。The spoon leaves a channel that stays for a second.
2Pour in 900 ml hot water with the soy sauce and white pepper. Bring to a rolling boil.
Broth is a bright orange-red with bubbles breaking across the whole surface.
You know it's right when: 蒸汽从中心稳定成柱上升。Steam rises in a steady column from the center.
3Add napa cabbage and simmer 4 minutes until the leaves turn translucent and the stems soften.
Leaf parts look glossy and wilted; stems bend instead of snapping.
You know it's right when: 筷子能轻松扎透最粗的菜帮。A chopstick pierces the thickest stem easily.
4Add the vermicelli and cook 3 minutes until soft and slippery.
🔍 Look for Medium heat Vermicelli turns from opaque white to translucent and spreads out.
You know it's right when: 挑起的粉丝顺滑滑落,不回弹。A strand slides off the chopsticks without springing back.
5Turn the heat to high, add the beef rolls in batches and swish for 20-30 seconds each until the color changes. Scatter scallion and serve at once.
🔍 Look for High heat Beef goes from bright red to pale brown with fat turning translucent.
You know it's right when: 肉片边缘卷起,汤在数秒内重新沸腾。Slices curl at the edges and the broth re-boils within seconds.
Tips
- · Keep the beef frozen until the last minute — it slices and separates more cleanly.
- · Never boil the beef longer than 30 seconds or it turns tough.
- · The vermicelli keeps drinking liquid; serve immediately or add a splash of hot water at the table.

Common questions
Is there a vegan substitute for oyster sauce?
Yes — 'mushroom oyster sauce' (often labeled vegetarian/vegan) is sold in most Asian grocers and increasingly in mainstream supermarkets. It behaves 1:1 and adds the same glossy umami. Watch labels if you're also gluten-free; most brands are GF, some aren't.

What's the difference between light and dark soy sauce?
Light soy (生抽) is the everyday salty seasoning — thin and salty, used in most recipes. Dark soy (老抽) is thicker, darker, slightly sweet, and used mostly for color (braises, fried rice). If you only buy one, get light soy. For dark soy's color: 1 tbsp light soy + a pinch of sugar + a few drops of molasses.

How do you cook vermicelli (glass noodles) in a clay pot without it turning to mush?
Soak the dried vermicelli in warm water just until pliable (not fully soft) before adding — it finishes cooking in the broth. Add it last, give it only 2–3 minutes, and don't let it sit in liquid too long or it bloats and breaks. A clay pot holds heat well, so pull it off the flame the moment the noodles are tender.
