Sesame Sauce Dipping Sauce (Májiàng Diǎnliào)

家庭快手版 · Home version: Family version uses no MSG or pre-mixed sesame paste—just toasted sesame paste thinned with warm water and balanced with vinegar and soy. Restaurant versions often add sugar and garlic powder; ours relies on fresh scallion and ginger.

My aunt in Beijing’s Hutong made this every winter for hot pot nights—she’d toast sesame seeds in a wok over low heat until golden, then grind them by hand in a stone mortar. I still remember the nutty aroma filling her tiny kitchen while snow fell outside the courtyard gate.

Instructions

  1. 1In a medium bowl, place toasted sesame paste. Slowly whisk in 60 ml (¼ cup) warm water (40–45°C / 105–113°F), 15 ml at a time, until smooth and creamy—do not rush or it will seize.

Smooth, glossy, pourable paste with no lumps or oil separation

You know it's right when: 酱体先略变稠,继而转为丝绒般柔滑质地Paste thickens slightly then loosens into a velvety consistency

  2. 2Add light soy sauce and Chinese black vinegar. Whisk vigorously for 30 seconds to fully emulsify.

You know it's right when: 液体边缘略起细泡,整体粘连成一体Liquid becomes cohesive and slightly foamy at edges

  3. 3Stir in grated ginger and scallion greens. Mix gently just until evenly distributed—do not overmix.

  5. 5Taste and adjust: add 1 tsp more vinegar if too rich, or ½ tsp light soy sauce if too sharp. Serve cool or at room temperature.

    🔍 Look for 1 分钟 · 1 minute

Balanced aroma—nutty, tangy, savory—no single note dominates

You know it's right when: 舌尖先感鲜味,继而微酸与姜辛回甘Tongue registers umami first, then gentle acidity and warmth from ginger

Tips

  • · Store covered in fridge up to 5 days—stir well before reuse.
  • · If sauce thickens overnight, stir in 1 tsp warm water per tablespoon.
  • · For authentic Beijing style, omit garlic—my aunt said ‘garlic masks the sesame’.

Common questions

Is there a vegan substitute for oyster sauce?

Yes — 'mushroom oyster sauce' (often labeled vegetarian/vegan) is sold in most Asian grocers and increasingly in mainstream supermarkets. It behaves 1:1 and adds the same glossy umami. Watch labels if you're also gluten-free; most brands are GF, some aren't.

What's the difference between light and dark soy sauce?

Light soy (生抽) is the everyday salty seasoning — thin and salty, used in most recipes. Dark soy (老抽) is thicker, darker, slightly sweet, and used mostly for color (braises, fried rice). If you only buy one, get light soy. For dark soy's color: 1 tbsp light soy + a pinch of sugar + a few drops of molasses.

Why do you cook the aromatics (garlic/ginger) first on low heat?

Aromatics contain oils and sugars that turn bitter if scorched. Gentle heat (low-medium) lets garlic and ginger release their fragrance without browning too fast. If the pan is too hot, garlic goes bitter within seconds — that's why we always add aromatics first, before the main ingredients.
