My uncle Wang in Yuzhong District made this for me when I was sick with fever at 12 — he said ‘tofu cools the body, chilies wake the spirit.’ He always used local fermented black beans (douchi) as a secret umami boost, though we omit them here for Western pantry access.

1Cut tofu into 1.5 cm cubes. Pat surface dry with paper towel. Lightly coat cubes with 1 tsp cornstarch (4 g).

5Add 1 tsp minced ginger and 1 tsp minced garlic; stir 30 seconds. Return tofu. Pour in soy sauce, black vinegar, and remaining cornstarch (4 g) mixed with 2 tbsp water. Toss gently 1 minute. Fold in peanuts. Serve hot.

Common questions
What type of tofu should I use?
Silken/soft tofu (嫩豆腐) for mapo tofu and soups — silky, falls apart gently. Firm/extra-firm (老豆腐) for stir-fries, braises, and anything you want to keep its shape. If the recipe doesn't say, firm is the safe default for stir-fries.

Is there a vegan substitute for oyster sauce?
Yes — 'mushroom oyster sauce' (often labeled vegetarian/vegan) is sold in most Asian grocers and increasingly in mainstream supermarkets. It behaves 1:1 and adds the same glossy umami. Watch labels if you're also gluten-free; most brands are GF, some aren't.

I can't find Sichuan peppercorns. What do I use?
Honestly, there is no true substitute — the numbing (má) sensation is unique. Best local approximation: 1/2 tsp black pepper + a little citrus zest for warmth and brightness. If you cook Sichuan food regularly, buy them online; they keep for months in an airtight jar.
