Garlic-Roasted Eggplant (Grilled Sichuan-Style)
蒜蓉烤茄子 · suàn róng kǎo qié zi
At Chengdu’s Jinli Street, my uncle ran a tiny stall where he’d roast whole eggplants over glowing charcoal, then split them open and pile on a mountain of raw garlic, chili oil, and cilantro. He told me, 'The magic is in the contrast — hot charcoal smoke meets cold, pungent garlic. At home? Oven does 90% — just don’t skip the raw garlic finish.'

Instructions
1Preheat oven to 220°C (425°F). Halve eggplants lengthwise. Score flesh diagonally in 1-cm-deep crisscross pattern — do not cut through skin.

You know it's right when: 刀感微阻——茄皮完好,茄肉已软Knife meets slight resistance — skin intact, flesh yielding
2Place cut-side up on a foil-lined baking sheet. Roast 20 minutes until skin wrinkles, flesh collapses, and edges char lightly.

Tips
- · Roasting whole halves preserves moisture better than diced eggplant.
- · Use fresh garlic — pre-minced lacks punch and oxidizes too fast.
- · For extra depth, brush shells with ½ tsp sesame oil before broiling.

Common questions
Is there a vegan substitute for oyster sauce?
Yes — 'mushroom oyster sauce' (often labeled vegetarian/vegan) is sold in most Asian grocers and increasingly in mainstream supermarkets. It behaves 1:1 and adds the same glossy umami. Watch labels if you're also gluten-free; most brands are GF, some aren't.

I can't find Sichuan peppercorns. What do I use?
Honestly, there is no true substitute — the numbing (má) sensation is unique. Best local approximation: 1/2 tsp black pepper + a little citrus zest for warmth and brightness. If you cook Sichuan food regularly, buy them online; they keep for months in an airtight jar.

What's the difference between light and dark soy sauce?
Light soy (生抽) is the everyday salty seasoning — thin and salty, used in most recipes. Dark soy (老抽) is thicker, darker, slightly sweet, and used mostly for color (braises, fried rice). If you only buy one, get light soy. For dark soy's color: 1 tbsp light soy + a pinch of sugar + a few drops of molasses.
