Glass noodles (粉丝, fěn sī) are made from sweet potato or mung bean starch, and they behave unlike wheat noodles: they go from brittle to bouncy in minutes and never turn mushy if you respect the soak. In Dongbei, the dish this grew out of is 大拉皮 — wide sheets of potato starch jelly sliced into ribbons and dressed with sesame paste and vinegar.   1. 1Bring a pot of water to a boil, then turn off the heat. Add the dried vermicelli and let it soak off the heat for 5-7 minutes, until the strands are pliable but still have a firm center. Soaking off the boil prevents the outside from turning to paste while the core stays hard.

  3. 3Transfer the noodles to a large bowl. If the strands are very long, cut them once or twice with kitchen scissors — long noodles tangle and refuse to hold dressing evenly. Julienne the cucumber and carrot and pile them on top.

What's the difference between light and dark soy sauce?

Light soy (生抽) is the everyday salty seasoning — thin and salty, used in most recipes. Dark soy (老抽) is thicker, darker, slightly sweet, and used mostly for color (braises, fried rice).
