Chrysanthemum Tofu

Home version: Family version uses soft tofu and a paring knife—not a professional 'tofu slicer'—and simmers gently in clear broth instead of flash-steaming, preserving delicate texture.

My grandmother in Yangzhou made this for my grandfather after his surgery—she’d whisper, 'Tofu must bloom like chrysanthemums in spring rain, not shatter like winter ice.' She used only local soy milk tofu from Dongguan Street market, pressed just that morning.

Instructions

  1. 1Prep tofu: Drain tofu gently in a colander for 2 minutes. Pat top and sides *very* dry with paper towels—moisture prevents clean cutting.

    🔍 Look for 2 分钟 · 2 minutes

Surface feels cool and matte, no beadings of water.

You know it's right when: 厨房纸揭起洁净,无水渍沾染。Paper towel lifts cleanly, no damp transfer.

  2. 2Slice into ribbons: Hold tofu steady with chopsticks. Using a very sharp paring knife, slice 1.5-mm-thick planks. Stack 3–4 planks; cut lengthwise into 1.5-mm-wide matchsticks. Gently separate bundles with fingertips.

    🔍 Look for 12–15 分钟 · 12–15 minutes

Ribbons curl slightly at ends, forming loose 'petals'.

You know it's right when: 刀过无声,无拖拽或挤压感。Knife makes silent, smooth cuts—no dragging or compression.

  3. 3Blanch: Bring stock to gentle simmer (not boil) in a wide saucepan. Add ginger and scallion whites. Carefully lower tofu ribbons into broth using a slotted spoon. Simmer uncovered 3 minutes—do not stir.

🔍 Look for Low heat 3 分钟 · 3 minutes

Tofu ribbons float freely, edges softening but holding shape.

You know it's right when: 锅边泛细泡,汤面仅微颤。Tiny bubbles rise gently around pot edges; surface barely shivers.

  4. 4Season and finish: Remove ginger and scallion whites. Stir in white pepper. Turn off heat. Let stand 1 minute to infuse.

    🔍 Look for 1 分钟 · 1 minute

Broth remains crystal-clear, no cloudiness from tofu.

You know it's right when: 香气由姜辛转为温润椒香。Aroma shifts from raw ginger to warm, floral pepper.

  5. 5Serve: Ladle tofu and broth into warmed bowls. Garnish with scallion greens and a few drops of sesame oil.

🔍 Look for 即刻 · immediately

Tofu ribbons bloom outward like open chrysanthemums in clear broth.

You know it's right when: 首勺入口即有清鲜醇香。First spoonful releases clean, savory fragrance.

Tips

  • · Chill tofu 15 minutes before slicing—it firms up slightly for cleaner cuts.
  • · If ribbons break, gather them gently and let them 'bloom' in hot broth—they’ll re-form naturally.
  • · Never use firm or extra-firm tofu—the texture won’t yield delicate petals.

Common questions

What type of tofu should I use?

Silken/soft tofu (嫩豆腐) for mapo tofu and soups — silky, falls apart gently. Firm/extra-firm (老豆腐) for stir-fries, braises, and anything you want to keep its shape. If the recipe doesn't say, firm is the safe default for stir-fries.

Why do you cook the aromatics (garlic/ginger) first on low heat?

Aromatics contain oils and sugars that turn bitter if scorched. Gentle heat (low-medium) lets garlic and ginger release their fragrance without browning too fast. If the pan is too hot, garlic goes bitter within seconds — that's why we always add aromatics first, before the main ingredients.

Is there a vegan substitute for oyster sauce?

Yes — 'mushroom oyster sauce' (often labeled vegetarian/vegan) is sold in most Asian grocers and increasingly in mainstream supermarkets. It behaves 1:1 and adds the same glossy umami. Watch labels if you're also gluten-free; most brands are GF, some aren't.
