Braised Chicken with Potatoes (土豆烧鸡)

The home version browns less aggressively and simmers gentler, which keeps the broth clearer and the potato chunks intact — worth losing a little richness for.

Every Chinese family has a version of this, usually learned by watching rather than measuring. The potatoes are not a vegetable side; they are half the point. They go in late enough to stay whole, absorb the chicken fat and soy, and come out tasting more interesting than the chicken. The trick nobody writes down: pour the gravy over rice and give the potatoes a head start.

  1. 1Rinse the chicken pieces and pat very dry. If there is time, leave them uncovered in the fridge 20 minutes — dry skin browns much better.

  2. 2Heat oil in a heavy pot over medium-high. Sear the chicken skin-side down without moving it for 4 minutes, then turn and brown the other sides, about 3 minutes total.

Common questions

Can I skip Shaoxing wine? What's the substitute?

Dry sherry is the closest 1:1 swap (fidelity ~80%). No sherry? Use a splash of white wine plus a little water, or just skip it and add a tiny extra pinch of sugar — the wine's job is depth and removing meat's gamey notes, and a good marinade covers most of it.

Why do you cook the aromatics (garlic/ginger) first on low heat?

Aromatics contain oils and sugars that turn bitter if scorched. Gentle heat (low-medium) lets garlic and ginger release their fragrance without browning too fast. If the pan is too hot, garlic goes bitter within seconds — that's why we always add aromatics first, before the main ingredients.

What's the difference between light and dark soy sauce?

Light soy (生抽) is the everyday salty seasoning — thin and salty, used in most recipes. Dark soy (老抽) is thicker, darker, slightly sweet, and used mostly for color (braises, fried rice). If you only buy one, get light soy. For dark soy's color: 1 tbsp light soy + a pinch of sugar + a few drops of molasses.
