Cantonese Pan-Seared Chicken Breast
粤式香煎鸡胸 · yue shi xiang jian ji xiong
My grandfather in Liwan District taught me this while flipping chicken in his wok-shaped frying pan—he said ‘golden edge, soft center’ was the sign of respect for the ingredient. We ate it with steamed bok choy and jasmine rice, never with sauce.

Instructions
1Place chicken cutlets between two sheets of parchment. Gently pound with flat side of cleaver or rolling pin to 1 cm thickness, keeping edges intact.

You know it's right when: 无撕裂或毛边。No tearing or ragged edges.
2In a shallow dish, combine light soy sauce, Shaoxing wine, and ginger. Add chicken; marinate 10 minutes at room temperature.
短时腌制保嫩,不需过夜

You know it's right when: 肌肉纤维明显松弛、颜色微深。Meat fibers visibly relax and darken slightly.
3Pat chicken *very* dry with paper towels—moisture is the enemy of sear. Let sit 2 minutes uncovered.

You know it's right when: 按压后纸巾仍干燥。Paper towel stays dry after pressing.
4Heat oil in heavy-bottomed skillet (cast iron or stainless) over medium-high until shimmering but not smoking (~180°C / 356°F). Carefully place chicken, smooth-side down.

第一次翻面是成败关键

You know it's right when: 锅铲轻推边缘即自然翘起。Edges lift cleanly when nudged with spatula.
Tips
- · If chicken sticks, wait 30 seconds—it will release naturally when properly seared.
- · Rest 3 minutes before slicing—this retains juices better than immediate cutting.
- · For subtle sweetness, add ½ tsp rock sugar to marinade (dissolve in warm soy sauce first).

Common questions
Can I skip Shaoxing wine? What's the substitute?
Dry sherry is the closest 1:1 swap (fidelity ~80%). No sherry? Use a splash of white wine plus a little water, or just skip it and add a tiny extra pinch of sugar — the wine's job is depth and removing meat's gamey notes, and a good marinade covers most of it.

Is there a vegan substitute for oyster sauce?
Yes — 'mushroom oyster sauce' (often labeled vegetarian/vegan) is sold in most Asian grocers and increasingly in mainstream supermarkets. It behaves 1:1 and adds the same glossy umami. Watch labels if you're also gluten-free; most brands are GF, some aren't.

What's the difference between light and dark soy sauce?
Light soy (生抽) is the everyday salty seasoning — thin and salty, used in most recipes. Dark soy (老抽) is thicker, darker, slightly sweet, and used mostly for color (braises, fried rice). If you only buy one, get light soy. For dark soy's color: 1 tbsp light soy + a pinch of sugar + a few drops of molasses.
