Crispy Savory Crepe with Crispy Youtiao
My uncle in Tianjin ran a jianbing cart near Nankai University for 27 years. He taught me to swirl the batter with one wrist flick — no electric spreader, just muscle memory and morning fog.

mung bean flour: Must be 100% mung bean — not soy or rice blend. Look for 'Lü Dou Fen' on yellow bag.
wheat flour: All-purpose flour works perfectly here.
crispy youtiao (fried dough stick): Buy frozen or fresh youtiao at Asian markets. If unavailable, substitute 100g day-old baguette, sliced thin, pan-fried until golden and crisp.

Instructions
1Whisk mung bean flour, wheat flour, and 250 ml cold water into a smooth, thin batter — no lumps. Let rest 20 minutes at room temperature.
Batter coats back of spoon thinly but doesn’t drip off immediately.
You know it's right when: 表面微亮,边缘偶有细小气泡。Surface appears slightly glossy; tiny bubbles may form at edges.
2Heat a nonstick 26-cm crepe pan over medium heat. Lightly brush with neutral oil (e.g., canola). Pour 60 ml batter into center, then immediately tilt and swirl to coat evenly.
🔍 Look for Medium heat Batter spreads into a translucent, lacy circle with fine speckles.
You know it's right when: 边缘微微翘起,表面失去水光。Edges begin to lift slightly; surface loses wet shine.
3When surface is set but still slightly tacky (about 45 seconds), crack one egg onto center, then quickly spread and flatten with spatula. Sprinkle scallions and drizzle light soy sauce evenly.
🔍 Look for Medium heat Egg white turns opaque at edges while yolk remains glossy.
You know it's right when: 蛋清边缘出现第一颗细小气泡。First tiny bubbles appear in egg white near perimeter.
4Flip carefully using a wide spatula. Cook second side 30–45 seconds until golden and crisp. Transfer to plate, top with youtiao pieces and optional fermented bean paste (doubanjiang) if desired.
Bottom shows even golden-brown lattice pattern with slight blistering.
You know it's right when: 铲起边缘时,饼边自然微卷。Edges curl up slightly when lifted with spatula.
5Fold in half, then fold again into quarters. Serve immediately while hot and crisp.
Steam rises faintly from folded edges; crust shatters audibly when bitten.
You know it's right when: 指尖轻按即发出清脆‘咔’声。Crust gives audible ‘snap’ when pressed lightly with finger.
Tips
- · Use a flat-bottomed ladle for consistent 60ml pours.
- · If batter thickens while resting, stir in 1 tsp water — never more.
- · Youtiao must be fully crisp before folding; soft ones make the jianbing soggy.

Common questions
Is there a vegan substitute for oyster sauce?
Yes — 'mushroom oyster sauce' (often labeled vegetarian/vegan) is sold in most Asian grocers and increasingly in mainstream supermarkets. It behaves 1:1 and adds the same glossy umami. Watch labels if you're also gluten-free; most brands are GF, some aren't.

What's the difference between light and dark soy sauce?
Light soy (生抽) is the everyday salty seasoning — thin and salty, used in most recipes. Dark soy (老抽) is thicker, darker, slightly sweet, and used mostly for color (braises, fried rice). If you only buy one, get light soy. For dark soy's color: 1 tbsp light soy + a pinch of sugar + a few drops of molasses.
