Puffed Egg-Stuffed Pancake
My grandmother in Beijing’s Hutong made these every Sunday before temple visits. She’d whisper ‘the egg must breathe’ as she lifted the edge to inject — meaning: leave air space for steam expansion.

Instructions
1Mix flour and salt. Gradually add 150 ml warm water (40°C), kneading into a soft, supple dough. Cover and rest 30 minutes.
Dough forms a smooth, slightly tacky ball that springs back slowly when poked.
You know it's right when: 表面润泽,无干裂纹。Surface looks hydrated, no dry cracks.
2Divide dough into two balls. Roll each into a 15-cm round. Brush top surface lightly with sesame oil, sprinkle scallions and pinch edges to seal. Roll again into 18-cm rounds — layers will form naturally.
Surface shows faint concentric rings and subtle sheen from oil.
You know it's right when: 擀制时边缘不开裂、不漏气。Edges stay sealed without splitting during rolling.
3Heat a heavy-bottomed skillet over medium heat. Cook first pancake 90 seconds until bottom is pale gold and blisters appear. Flip — do NOT press down.
🔍 Look for Medium heat Small, even blisters (2–3 mm) dot the surface like tapioca pearls.
You know it's right when: 铲背轻触,气泡不塌陷。Blisters hold shape when gently tapped with spatula.
4Immediately after flipping, pierce 3 small holes around center with chopstick tip. Quickly pour 1 lightly beaten egg (about 30 ml) through holes into the pocket. Cover pan and steam 60 seconds.
Egg flows visibly into gaps; surface swells upward 5–8 mm.
You know it's right when: 锅盖下有轻微嘶嘶声;盖内侧凝结水珠。Slight hissing sound under lid; steam condenses on underside.
5Uncover, cook uncovered 45 seconds until top sets and bottom crisps. Flip once more and cook final 30 seconds. Slice into wedges and serve hot.
🔍 Look for Medium heat Edges curl and turn deep amber; cut surface reveals airy, eggy core.
You know it's right when: 铲柄轻叩底面,发出空响。Bottom emits hollow ‘tap’ sound when tapped with spatula handle.
Tips
- · Keep egg at room temperature — cold egg slows puffing.
- · If egg leaks, reduce next injection volume by 5 ml — dough hydration varies.
- · Best eaten within 5 minutes; reheating makes it dense.

Common questions
Can I reduce the salt/soy in this recipe?
Yes — soy sauce is the main sodium source. Use light soy at 2/3 amount and finish with salt only to taste. Rinse canned/doubanjiang components if possible. Note: reducing soy also reduces color; a drop of dark soy or a pinch of sugar can restore depth without salt.

My dish came out too salty. Can I fix it?
Quick fixes: add a squeeze of lemon/vinegar (acidity masks salt), stir in a few potato chunks or rice (they absorb salt — remove before serving), or bulk it out with more rice/vegetables. Next time: add soy sauce in two stages, taste in the middle, and remember light soy + a pinch of salt is often enough.
