Frozen & Thawed Tofu for Hot Pot (Dòng Dòu Fǔ)

冻豆腐 · dong dou fu

家庭快手版 · Home version: Family version freezes firm tofu *raw*, then thaws slowly in fridge—no blanching or pressing. This creates irregular, absorbent pores ideal for soaking up broth. Restaurants often deep-fry first for crispness, which we omit for authenticity and ease.

In Harbin winters, my grandmother stored blocks of tofu in the unheated balcony—temperatures dropped below -20°C, freezing them solid overnight. 'The colder it freezes, the fluffier it gets when thawed,' she’d say, crumbling the thawed cubes into our mutton soup like snow.

Ingredients

  • cold water, for thawing冷水(用于解冻)🛒 local500 ml
  • light soy sauce生抽🏮 asian10 ml
  • Chinese black vinegar陈醋🏮 asian5 ml

firm tofu, block (not silken or soft): Must be water-packed firm tofu—check label for 'calcium sulfate' coagulant, not glucono delta-lactone (GDL).

cold water, for thawing: Never thaw at room temperature—risk of bacterial growth in porous tofu.

light soy sauce: Adds umami depth without darkening color.

Chinese black vinegar: Substitute balsamic vinegar if unavailable—but true black vinegar gives deeper tang.

Instructions

  1. 1Drain tofu and pat dry with paper towels. Place uncovered on a parchment-lined tray and freeze solid—minimum 8 hours, ideally overnight.

    🔍 Look for 8–12 小时 · 8–12 hours

Surface turns opaque yellowish-white; no visible ice crystals remain on exterior.

You know it's right when: 轻叩发出空响。Tofu sounds hollow when tapped lightly.

  2. 2Transfer frozen tofu to a bowl. Cover with cold water and refrigerate 4 hours—do not rush with warm water.

    🔍 Look for 4 小时 · 4 hours

Tofu swells to 1.5× original size; surface looks spongy and deeply pitted.

You know it's right when: 水变灰浊;豆腐触感轻盈、富有弹性。Water turns cloudy gray; tofu feels light and springy.

  3. 3Drain thoroughly. Gently squeeze each piece between palms to remove excess water—stop when no droplets form.

    🔍 Look for 2 分钟 · 2 minutes

Tofu shrinks slightly; surface looks dry-matte, not glistening.

You know it's right when: 水平托掌,掌心无积水。No water pools in palm when held horizontally.

  4. 4Cut into 2.5-cm cubes. In a small bowl, mix light soy sauce and black vinegar. Pour over tofu and toss gently to coat.

    🔍 Look for 1 分钟 · 1 minute

Cubes glisten with thin, even glaze; no pooling liquid remains.

You know it's right when: 每块挂汁不滴落。Each cube holds coating without dripping.

  5. 5Let marinate 10 minutes at room temperature. Then add directly to simmering hot pot broth—cook 3–4 minutes until heated through and plump.

    🔍 Look for Medium-high 3–4 分钟 · 3–4 minutes

Cubes swell further, turn creamy beige, and absorb broth visibly.

You know it's right when: 无豆腥气;边缘柔润但仍成形。No raw tofu smell remains; edges soften but hold shape.

Tips

  • · Freeze extra tofu blocks in portioned bags—they keep 3 months frozen.
  • · Save the cloudy thaw water—it’s rich in soy proteins; add to miso or vegetable broths.
  • · For richer mouthfeel, pan-sear marinated cubes in sesame oil before adding to hot pot.

Common questions

What type of tofu should I use?

Silken/soft tofu (嫩豆腐) for mapo tofu and soups — silky, falls apart gently. Firm/extra-firm (老豆腐) for stir-fries, braises, and anything you want to keep its shape. If the recipe doesn't say, firm is the safe default for stir-fries.

Is there a vegan substitute for oyster sauce?

Yes — 'mushroom oyster sauce' (often labeled vegetarian/vegan) is sold in most Asian grocers and increasingly in mainstream supermarkets. It behaves 1:1 and adds the same glossy umami. Watch labels if you're also gluten-free; most brands are GF, some aren't.

What's the difference between light and dark soy sauce?

Light soy (生抽) is the everyday salty seasoning — thin and salty, used in most recipes. Dark soy (老抽) is thicker, darker, slightly sweet, and used mostly for color (braises, fried rice). If you only buy one, get light soy. For dark soy's color: 1 tbsp light soy + a pinch of sugar + a few drops of molasses.
