Northeastern Mixed Stew
东北乱炖 · dōng běi luàn dùn
Every winter holiday in Shenyang, my grandma Li would fill a black iron pot with whatever was left in the root cellar — dried tofu, frozen peas, last-of-the-season eggplant. She called it ‘luàn dùn’ because ‘nothing needs to be perfect — just honest and warm.’

Instructions
1Heat 1 tbsp neutral oil in a heavy-bottomed pot over medium heat. Sauté minced garlic until fragrant and pale gold — about 45 seconds. Do not brown.

You know it's right when: 蒜香明显上升,生辣味褪去,转为甜暖香气Aroma lifts clearly — sharp rawness fades to sweet warmth
2Add green beans and stir-fry 2 minutes until bright green and slightly blistered. Add eggplant and continue stir-frying 3 more minutes until eggplant softens slightly and darkens.

You know it's right when: 茄子明显出水——表面湿润而非干瘪Eggplant releases moisture visibly — surface looks damp, not dry
3Add dried tofu, corn, and 300 ml hot water. Bring to a gentle boil, then reduce heat to low, cover, and simmer 15 minutes.

4Uncover and increase heat to medium. Stir in light soy sauce and simmer 5 more minutes until liquid reduces to a light glaze clinging to vegetables.
最后收汁,提鲜增亮

Tips
- · This stew tastes best when made with seasonal produce — try sweet potatoes instead of corn in autumn
- · Dried tofu adds chew and umami; don’t skip it
- · If using frozen green beans, add them 2 minutes later to avoid mushiness

Common questions
What type of tofu should I use?
Silken/soft tofu (嫩豆腐) for mapo tofu and soups — silky, falls apart gently. Firm/extra-firm (老豆腐) for stir-fries, braises, and anything you want to keep its shape. If the recipe doesn't say, firm is the safe default for stir-fries.

Is there a vegan substitute for oyster sauce?
Yes — 'mushroom oyster sauce' (often labeled vegetarian/vegan) is sold in most Asian grocers and increasingly in mainstream supermarkets. It behaves 1:1 and adds the same glossy umami. Watch labels if you're also gluten-free; most brands are GF, some aren't.

What's the difference between light and dark soy sauce?
Light soy (生抽) is the everyday salty seasoning — thin and salty, used in most recipes. Dark soy (老抽) is thicker, darker, slightly sweet, and used mostly for color (braises, fried rice). If you only buy one, get light soy. For dark soy's color: 1 tbsp light soy + a pinch of sugar + a few drops of molasses.
