Clay Pot Meatballs
Every Lunar New Year Eve in Xi’an, my father’s cousin would mix minced pork with ginger, scallion, and Shaoxing wine in a wide wooden bowl, then slap the mixture between his palms 50 times—'to wake up the meat,' he’d say—before dropping them into the sizzling clay pot with a soft *puff*.

Instructions
1In a bowl, combine pork, scallion whites, grated ginger, and Shaoxing wine. Mix vigorously in one direction for 2 minutes until sticky and cohesive.
🔍 Look for Low heat Mixture pulls away from bowl sides and forms a glossy, tacky mass.
You know it's right when: 抗拒勺分,牢牢粘指。Resists spoon separation—sticks firmly to fingers.
2Wet hands and form 6–8 oval meatballs (40 g each). Press each firmly into cold clay pot base.
🔍 Look for Low heat Meatballs flatten slightly, edges seal tightly against pot surface.
You know it's right when: 丸子底部及四周无气泡空隙。No air pockets visible under or around balls.
3Heat pot over medium heat 3 minutes until bottom of meatballs sizzles and begins to brown.
🔍 Look for Medium heat Golden-brown crust forms evenly on contact surface.
You know it's right when: 持续滋滋声,无烟无爆裂。Steady sizzle—no smoke or popping.
4Add 300 ml hot water. Cover and simmer 10 minutes. Uncover and add scallion greens.
Broth simmers gently; meatballs swell slightly and float upright.
You know it's right when: 蒸汽匀速自盖缝逸出,非喷涌。Steam escapes steadily from lid edge—not forcefully.
5Simmer uncovered 3 more minutes. Skim any foam. Serve hot, garnished with extra scallion greens.
🔍 Look for Medium heat Broth is clear amber; meatballs are firm but yield to gentle pressure.
You know it's right when: 浮沫不再新生,仅余洁净小泡。Foam stops forming—only clean bubbles remain.
Tips
- · Never skip the hand-mixing—it builds texture no machine can replicate.
- · If using store-bought ground pork, add 1 tsp cold water per 100 g to restore juiciness.
- · Clay pot stew improves after resting 5 minutes off heat—flavors deepen and fat settles.

Common questions
Can I skip Shaoxing wine? What's the substitute?
Dry sherry is the closest 1:1 swap (fidelity ~80%). No sherry? Use a splash of white wine plus a little water, or just skip it and add a tiny extra pinch of sugar — the wine's job is depth and removing meat's gamey notes, and a good marinade covers most of it.

Why do you cook the aromatics (garlic/ginger) first on low heat?
Aromatics contain oils and sugars that turn bitter if scorched. Gentle heat (low-medium) lets garlic and ginger release their fragrance without browning too fast. If the pan is too hot, garlic goes bitter within seconds — that's why we always add aromatics first, before the main ingredients.

I only have 30 minutes. Which recipes should I pick?
Look for the 'Quick' filter (≤30 min) — tomato & egg, egg fried rice, scallion pancakes, beef & broccoli, and mapo tofu (if you have doubanjiang) all fit. Prep tip: mise-en-place everything first; the actual cooking is usually under 10 minutes.
